Easter is around the corner! If you’re spending the long weekend at home, why not make new memories with those nearest and dearest to you. Gather your family and friends around for a home-cooked meal that will satisfy the senses!

Whether it’s brunch or a dinner, Easter is a great time to experiment with something new. Why not create a range of warm dishes to welcome the cooler weather. Keen for an easier way to entertain? Host a potluck or DIY pizza lunch with home-made dough and everyone can top their own pizzas for an effortless take on entertaining this Easter!

BREAK IT UP WITH BRUNCH

Keen to host a brunch with your loved ones this Easter? Do it with a spread of pancakes or maybe some eggs in a Shakshuka to warm up and fill the day.

Recipe: Pancakes
Serves 4
Total time: 15 minutes

Whip up this easy pancake mix with Kenwood’s QuickMix+ Hand Mixer. Featuring the QuickMix+ gradual speed setting, the hand mixer delivers a slow start to reduce mess when ingredients are driest.

Ingredients 1

  • 200 grams Plain flour
  • 2x Eggs
  • 35 grams Caster sugar
  • 200 ml Milk
  • 1 1/4 tsp. Baking powder
  • 1 pinch Salt

Ingredients 2

  • 2 Tbsp. Butter

Method

Getting started

  1. Fit the Stainless Steel Beaters to the Kenwood hand mixer.

Stage 1

  1. Add Ingredients 1 (flour, eggs, sugar, milk, baking powder, salt) into a mixing bowl.
  2. Use the Kenwood hand mixer with Stainless Steel Beaters and start with the QuickMix+ speed.
  3. Gradually increase the mixing speed and mix until all ingredients are evenly incorporated. This should take about 2 minutes.

Stage 2

  1. Add Ingredients 2 (butter) to the frying pan.
  2. Heat on a medium high heat.
  3. Gradually pour the batter into the frying pan until the bottom of the pan is just covered.
  4. Cook each side for about 1 minute or until golden brown.
  5. Transfer the pancake to a serving plate and repeat with the rest of the batter.
  6. Serve with toppings of your choice such as maple syrup and fresh fruits such as bananas and berries.

Recipe: Shakshuka
Serves 4
Prep time: 10 minutes
Cook time: 15 minutes

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 brown onion, sliced
  • 1 red capsicum, sliced
  • 2 cloves garlic, thinly sliced
  • 2 teaspoons smoked paprika
  • 1 teaspoon ground cumin
  • 400g can crushed tomatoes
  • Sea salt and pepper, to taste
  • 4 large free-range eggs
  • 1 bunch coriander or parsley, roughly chopped
  • Optional : 6 grilled flatbreads, to serve

Method

  1. Place a medium-sized pan over a medium heat. Add the olive oil, sliced onion, sliced capsicum and sliced garlic and sauté, stirring for 5 minutes or until the onion is translucent and the capsicum has softened.
  2. Add the paprika and cumin and continue to stir for a further 1 minute or until the spices are toasted and fragrant.
  3. Stir through the crushed tomatoes, season to taste and bring to a simmer.
  4. Reduce the heat to low then using the back of a spoon, create four wells in the mixture for your eggs. Crack an egg into each well, cover the pan with a lid and allow to cook for 5 minutes or until the eggs have cooked to your liking.
  5. Garnish the dish with chopped coriander or parsley and serve at the table with grilled flatbreads. Enjoy!

DIY PIZZA LUNCH

Not sure what to do this Easter? A DIY pizza lunch will do the trick! Prepare pizza dough ahead of time, let everyone top their own pizzas; even the kids can get involved and then all you have to do is pop them into the oven for effortless entertaining!

Recipe: Pizza Dough
Serves 6

Total time: 80 minutes

Knead together pizza dough quickly with the Stainless Steel Kneaders of Kenwood’s QuickMix+ Hand Mixer. Featuring a pulse function and gripped handle, this mixer delivers powerful performance with comfortable handling.

Ingredients

  • 500 grams Plain flour
  • 7 grams Dried yeast
  • 2 Tbsp. Olive oil
  • 1 1/2 tsp. Salt
  • 300 grams Water

Method

Getting started

  1. Fit the Stainless Steel Kneaders to the Kenwood hand mixer.

Stage 1

  1. Add ingredients (flour, yeast, oil, salt, water) into a mixing bowl.
  2. Using the Kenwood hand mixer, start gradually with the QuickMix+ function. Increase the mix speed and mix all ingredients for 10 minutes or until dough is kneaded well.
  3. Cover with a tea towel and leave dough to prove for 40 minutes.
  4. Transfer the dough to a lightly floured worksurface and divide the dough into 2 equal pieces.
  5. Gently pull the edges into the centre. Roll the dough over and roll into a ball shape. Repeat this action with the other dough piece, then cover with a tea towel. Leave to rest for 10 minutes.
  6. Pre heat the oven to 250°
  7. Sprinkle plain flour onto the baking tray.
  8. Take one of the dough balls, and place upside down on the lightly floured worksurface. Carefully flatten the dough with your wrist.
  9. Using a rolling pin, shape the dough into a circle about 15 cm in diameter and 0.5cm thick.
  10. Place the dough onto the baking tray and garnish your pizza as desired.
  11. Bake for 10 minutes at 250°
  12. Repeat with the other dough ball.
  13. Serve pizzas warm.

DELIGHTFUL EASTER DINNER

Impress your guests with a delicious dinner this Easter. Textures and flavours combine in the Healthy Shrimp, Asparagus and Quinoa Salad alternatively, a Basil Pesto Pasta will cater to all, including non-meat eaters in the group. Both can be crafted on the Bosch 60cm Induction Cooktop.

Recipe: Healthy Shrimp, Asparagus and Quinoa Salad
Serves 2
Prep time: 30 minutes
Cook time: 30 minutes

Ingredients

  • 200g Fresh Prawns – Deshelled
  • 100g Cherry Tomatoes – Halved
  • 60g Baby Asparagus
  • 180g Quinoa Grains
  • 600ml Chicken Stock
  • 10g Chopped Garlic
  • 2 Tbsp Canola Oil
  • 4 Tbsp Extra Virgin Olive Oil
  • 10g Rough Cut Italian Parsley
  • 2 Sprigs Fresh Thyme
  • To Taste Rock Salt
  • To Taste Fresh Crushed Pepper

Method

  1. Boil chicken stock in a medium pot and cook the Quinoa Grains in the stock for 7 minutes.
  2. Strain the Quinoa Grain and set them aside.
  3. Heat up the canola oil in a pan, fry asparagus, prawns, thyme, garlic. Set the asparagus and prawn aside to cool.
  4. Pour quinoa into a mixing bowl. Next, add tomato cherries, stir-fried asparagus, prawn and extra virgin olive oil to it, and stir.
  5. Season to taste with the rock salt and fresh crushed pepper. When serving, garnish with the rough cut Italian parsley.

Recipe: Pesto Pasta
Serves 5
Prep time: 20 minutes
Cook time: 25 minutes

Ingredients

Pesto Mixture

  • 100g Basil Leaves
  • 80g Corn Oil
  • 30g Roasted Pine Nuts
  • 10g Garlic
  • 10g Grated Parmesan Cheese
  • 5g Salt
  • 5g White Pepper Powder
  • 1kg Ice Cubes

Pasta

  • 500g Desired Pasta Type
  • 5g Chopped Garlic
  • 2 tablespoon Cooking Oil

Garnish

  • 20g Grated Parmesan Cheese
  • 10g Chopped Italian Parsley
  • 5g Fresh Cracked Black Pepper
  • 30ml Extra Virgin Olive Oil

Method

Part 1 of 2 – Pesto Mixture

  1. Boil water in a medium sized pot and salt it.
  2. Upon boiling, blanch the basil leaves for 1 minute, then chill them in a container with ice cubes and water.
  3. Squeeze the excess water from the basil leaves, then blend them with corn oil, roasted nuts, garlic, cheese, salt and pepper using a Food Processor or blender.
  4. Make sure ingredients are packed together before blending them into a paste.

Part 2 of 2 – Pasta

  1. Boil water in a medium sized pot and salt it.
  2. Add pasta once the water boils, and cook the pasta according to the recommended timing on the packaging.
  3. In a slightly heated medium sized pan, add cooking oil and lightly fry the garlic.
  4. Turn down the heat to allow more time for the pasta to cook till it almost reaches its desired timing.
  5. When the pasta is left with about a minute to being fully cooked, add 5 tablespoons of pesto mixture and tossed it evenly into the pan with garlic.
  6. After the pasta is cooked, strain and toss it together with the pesto. Add some liquid from the water from the pasta if needed, to moisten the pasta.
  7. Garnish with parsley, cheese, olive oil, rock salt and cracked pepper.

Recipe: No Bake Chocolate Cookies

Ingredients

  • 1⅓ cups chocolate chips
  • ½ cup smooth peanut butter
  • 3 cups corn flakes cereal

Method

  1. Place the chocolate in the Sunbeam Mixmaster® HeatSoft™ Planetary Mixer bowl, attach the scraper beater and fit the Heatsplash™ guard onto the bowl.
  2. Turn on HeatSoft™ and select MELT on low speed. Gradually increasing speed, mix until the chocolate becomes silky smooth. Turn off HeatSoft™.
  3. Mix in the peanut butter until well combined and smooth.
  4. Add the corn flakes mix until all are well coated.
  5. Scoop the cookie mix onto a baking sheet lined with baking paper by the tablespoon, and form into a cookie shape with your hands (careful, it will be sticky!).
  6. Chill in the fridge or freezer until hardened and ready to eat!

Recipe: Chocolate Banana Split
Serves 1
Total time: 5 minutes

Ingredients

  • 200 ml of cold milk
  • Cocoa powder
  • Caramel sauce
  • 1/2 banana

Method

  1. To create the first part of the recipe, add a thin layer of caramel sauce and banana pieces to the bottom of a glass serving bowl.
  2. Use the Delonghi Eletta Explore Automatic Coffee Machine and froth 100ml of milk to create hot micro foam milk. Then mix in the cocoa powder evenly to create hot chocolate.
  3. Pour the hot chocolate into the bowl until it fills around 1/2 of the glass bowl.
  4. Prepare 100ml of cold milk foam using the Delonghi Eletta Explore Automatic Coffee Machine and pour it over the hot chocolate.
  5. To complete the recipe, decorate with caramel sauce and banana pieces.

Tip: For best visual results, pour each drink into the glass over the back of a long spoon to create even layers.
