Recipe 1: Air Fried Mummified Brie

Sunbeam’s 3-in-1 DiamondForce Digital Air Fryer features air fryer, proof & bake and dehydrate functions to let you carry out a range of tasks from the one appliance. Featuring a 5L cooking capacity, this air fryer will easily fit 1 or even 2 of the pastry-covered brie cheeses in its DiamondForce™ coated cooking basket, ensuring simple non-stick cooking and effortless cleaning, every time.

Ingredients

  • ½ sheet frozen puff pastry, partially thawed
  • 250g wheel of brie, cold from the fridge
  • Pitted dates, dried apricots, grapes, carrot sticks, blueberries, crackers, mandarins and parsley sprigs, to serve
  • 2 blueberries, for eyes

Method

  1. Slice pastry into 1cm thick strips. Wrap strips around the brie, overlapping, to represent a mummy’s bandage.
  2. Place brie in the basket of the Sunbeam 3-in-1 DiamondForce Digital Air Fryer. Set temperature to 200°C and time to 10 minutes, cooking until pastry is golden.
  3. Meanwhile, arrange pitted dates, dried apricots, grapes, carrot sticks, blueberries, crackers and mandarins on a serving platter or board. Add a sprig of parsley to the centre of each mandarin as a stem.
  4. Place hot brie on the platter, decorate with two blueberries as eyes, and serve immediately.

TIP: We used a spider-shaped bowl on top of our platter for an added touch of ‘spooky’, and to contain the gooey melted brie, once you cut it open.

Recipe 2: Pumpkin Margarita

Ingredients:

Margarita
  • 1/2 tsp. kosher salt
  • 1/2 tsp. pumpkin pie spice
  • 1 lime wheel, plus more for serving
  • 60ml reposado tequila
  • Approx. 22ml store-bought or homemade pumpkin spice syrup or simple syrup
  • Approx. 15ml Cointreau
  • Approx. 15ml fresh lime juice
  • 1 Tbsp. pumpkin puree
  • Ice
  • 1 lime wedge (optional)
  • 1x (3″) cinnamon stick (optional)
Pumpkin Spice Syrup (Optional)
  • 400g granulated sugar
  • 5x (3″) cinnamon sticks
  • 3 Tbsp. pumpkin puree
  • 60ml reposado tequila
  • 1 Tbsp. grated peeled ginger
  • 1/2 tsp. ground nutmeg
  • 1/4 tsp. ground cloves

Method:

Pumpkin Spice Syrup (Optional)
  1. In a medium pot over medium heat, cook sugar, cinnamon, pumpkin puree, ginger, nutmeg, cloves, and 2 cups water, stirring frequently, until sugar is dissolved, about 2 minutes. Continue to cook, stirring occasionally, until reduced and slightly thickened, about 6 minutes more.
  2. Strain through a fine-mesh strainer into a small heat proof container. Refrigerate until ready to use.

Make Ahead: Syrup can be made 3 weeks ahead. Keep refrigerated.

Margarita
  1. On a plate, mix salt and pumpkin pie spice. Rub rim of a rocks glass with lime wheel. Roll rim in spice mixture to coat.
  2. In a cocktail shaker, combine tequila, pumpkin spice syrup, Cointreau, lime juice, and pumpkin puree. Fill shaker with ice, cover, and vigorously shake until outside of shaker is very frosty, about 20 seconds.

Fill prepared glass with ice. Strain margarita into glass. Garnish with lime wheel and cinnamon stick (if using).

Ingredients

  • 2 shots espresso
  • Approx. 240ml milk
  • 1 tablespoon pumpkin puree
  • 1/2 teaspoon pumpkin pie spice mix
  • 1 tablespoon chocolate syrup
  • Whipped cream
  • Orange food coloring optional
  • Candy corn, candy pumpkins, or chocolate chips optional

Method

  1. In a small saucepan, combine your milk, pumpkin puree, and pumpkin spice mix.
  2. Heat on low, stirring regularly, for a few minutes. Don’t let the mixture boil.
  3. Pull two shots of espresso. If you don’t have an espresso machine, you can substitute with 120ml of strong brewed coffee.
  4. Drizzle chocolate syrup in your latte glass. Then add the espresso.
  5. Now it’s time for garnishes! Take it over the top by mixing orange food coloring into your whipped cream. Spoon the orange whipped cream onto your drink. Then use candy corn, candy pumpkin, or chocolate chips to form a Jack-O’-Lantern face. Sprinkle on a little cinnamon if you’d like.
